Here's some photos I've got right now:
Current cockpit config (except removed TV and moved LCD to the top, see bottom of page). This is the main media control center. Dual touchscreens allow for easy viewing and control by myself or the passenger. Also an IR remote for the stereo and a handy RF remote for the vanputer, which has an omni-directional range of about 20 ft. Also got a keyboard/trackball which folds behind my seat, and a 15" LCD monitor for the back. In the middle is a little digital voltmeter to monitor the rear battery level.

...and here's what it's like underneath.

The gizmos run this nifty little Xenarc MC-SC1 12V computer. It's got a P3 1GHz processor, 512MB RAM, 20GB of MP3s (over 3600 tracks and growing), 100GB of movies, cartoons and clips, DVD/CDRW drive, GPS, and a bunch of game emulators.

Here are the head units. First the Kenwood cassette it came with and the Clarion CD/MP3 I replaced it with. I put the silver faceplate back on the Clarion when I installed the screens.

The Kenwood cassette deck was relocated to a cubby-hole behind the driver seat.

I think the van came with Kenwood 6x9s, but those were replaced real quick with JBL 100-watts (left). I just replaced those with some Infinity Kappa 693.5s from E-bay (right) They're driven by a US Acoustics 100x2 amp under the passenger seat.

For a while I was using a Mirage 8" home theater sub running off an inverter. It kicked pretty hard, but I ditched it for an Audiobahn ABP10T dual 10" 600w bandpass box (which kicks WAY harder).

The subs fit right under the back seat, and I can still motor it down into a bed. The sub's lights glow out of the seat if I put the center table down.

I scrapped the original drawers under the back seat and built the space into a sliding amp rack for the Audiobahn A3201T 300x2 amp. I didn't even know that the amp glowed until I plugged it in. :P

I swapped out the 13" TV, and moved the LCD monitor to the top. I got a VGA/Composite converter & TV tuner, so I can still watch TV and use the VCR. The signal is also sent down to the two touchscreens. Here's the old TV setup, the new LCD setup, and a couple pics of the LCD.

Here's a half-assed diagram of the VanPuter:
