*UPDATES AT THE BOTTOM*
I built this PC with parts I had lying around. I did have to buy a new smaller form factor (micro ATX) motherboard and a smaller case but all the rest of the stuff I had. Its specs are as follows:
AMD Athlon XP Mobile 2700 CPU
256MBs of Kingston PC-2700 RAM
180 PSU that was supplied with the case
Gigabyte GA-7VM400M-RZ microATX motherboard
In-Win microATX case
40GB 7200RPM WD HDD
I used a Vector 350w (700w peak) power inverter with a 10AWG line running to the battery with a 30a inline fuse. The orange switch controls the power inverter, the red switch controls the FM modulator, and the red momentary switch in the center console is for the PC power. I bought the 7" lilliput touchscreen from solarpc.com and wired its power into the PCs, so it will turn on when I press the red button for the PC's power. Overall I am very pleased. Some told me I would get poor quality sound from using an FM modulator. I wired the audio cables on the opposite side of the car from the power lines. The quality isn't perfect, but it's just as good as if I popped a CD into my headunit. Anyway, enjoy. If you have any questions, e-mail me at bw25cox.net

I redid half the install by moving the inverter and PC to the trunk. It cut down on a lot of noise issues and now it's 100 times easier to troubleshoot and make modifications to the hardware and software sides, both. The following two pictures are the finished product for the most part:

For safety reasons and a pimp factor of 99 bagillion, I installed a really neat IR receiver for PCs (the Evation IRman) and a Pioneer CD-SR100 steering wheel remote. Now I can control all the main functions of the MediaCar program while still keeping my hands on the wheel! Pics below:
