For the power issue... check the fuse for the interior lights - it's also responsible for the constant 12v to the head unit. If you have the Infinity speakers, be sure to connect the amp relay ground behind the new head unit, and wire the new deck's remote amp turn on wire to the factory power antenna wire - this'll get the Infinity amps to come on.

About the overhead console... there could be a couple things causing that behaviour. First, I would clean the connectors at the body computer, located behind the passenger side kick panel. If you also have trouble getting the dash to go between metric and imperial, this is also often affected. Second, I would remove the overhead console and check the small 4 pin connector on the back - sometimes this gets corroded. If it is corroded, you can use a 4 pin set of computer hard drive molexes to replace these connectors. There's more that could be doing it, but those are the more obvious ones.
